New Zealand : From Our Land To Your Table

2 weeks ago I attended a cooking demonstration with Nadia Lim, New Zealand Masterchef winner alongside my blogger friends. It was such a fun and intimate event that we can really interact with Nadia while she is cooking. Nadia Lim was here in the conjunction of the New Zealand Week in Malaysia. She cooked awesome food using New Zealand's best ingredients and I will talk you through the recipe if you are interested to try them out!  ^_^  The cooking demonstration is held in Berjaya University College of Hospitality. Okay, lets get into the cooking demonstration, shall we? :)

Nadia Lim's book, Good Food Cook Book emphasizes on easy, healthy and delicious recipes. Just a little fact, Nadia's father is a Malaysian Chinese and her mother is a Kiwi. So yeah, that makes her a Malaysian. :) I always feel proud and happy whenever I met someone who is successful and a Malaysian too! :D  Nadia Lim has a new venture called 'My Food Bag' which is a home delivery business that provides healthy ingredients (groceries) for her customers to promote healthy eating. So what's the menu? ;)


GREEN COLADA

2 - 2 1/2 cups cubes fresh ripe pineapple (frozen)
1 ripe banana (frozen)
1 1/2 - 2 cups chopped spinach leaves (leaves only)
1 small ripe avocado
Juice of a lime
1 1/2 cups water or Mill Orchard apple juice

HOW TO :
Blend everything together until smooth! 


This is so refreshing and cooling. Yummy, this is so goooooooooood! :)


CHOCOLATE AVOCADO MOUSSE

2 medium firm ripe avocados
200g dark chocolate (cut into smaller pieces)
2-3 tbsps of honey
1/2 cup of milk, water or coconut milk
Fresh berries and grated chocolate for garnish

HOW TO :
1. Melt chocolate in a double boiler.
2. Mix avocado, melted chocolate, honey and liquid into a food processor and blend until smooth.
3.  Spoon into serving glasses and refrigerated for 10 - 15 minutes. 
4. Garnish with berries and grated chocolate.

If you love chocolate, you would definitely love this dessert. It is very creamy and chocolatey! ;)


SALMON AND AVOCADO TARTARE

Fresh  King Salmon fillet (skin removed and pin-boned)
1 1/2 tbsps chopped capers
2 tbsps finely minced shallots
2 tbsps finely chopped chives
1 tbsp finely chopped dill
Juice of 1 lemon
2 firm ripe avocadoes (diced into 1cm cubes)
1 tbsp of Village Press Infused Garlic Olive Oil
Flaky Sea Salt
Freshly ground black pepper
Rice wafers from Rutherford & Meyer and Beetroot Relish from Maison Tree (to serve) 

HOW TO :

1. Finely diced salmon into 0.5 - 1 cm cubes


2. Mix diced salmon, capers, shallots, chives, dill and lemon zest together. This mixture can be kept in the fridge until you are ready to serve.
3. Mix in the mixture with lemon juice, olive oil, avocado, flaky sea salt and black pepper when you are ready to serve.

4. To serve, divide the mixture into 4 parts and pack into 4 small ramekins or tea cups. Press mixture gently but firmly wit the back of a spoon. Invert each tartare on individual plates. 

5. Serve with rice wafers and beetroot relish on the side.

This Salmon and Avocado Tartare is to die for. It is refreshing and the salmon is so good. I can totally taste the freshness and yes I love salmon, so this is right up in my alley. All the flavours mix well together and create a wonderful taste in my mouth. I would definitely try this out once again! :)

  1. Nadia Lim is as beautiful (and young!) as she is talented! Great event - everything looks so delicious. Some great chefs are emerging from the young blood these days. Lovely post, Sabby, and it was great to meet you at the MUFE event. Loved taking your picture!
